How To Cook
Thaw in the refrigerator or in a bowl of cold water, never at room temperature, and pat the surface dry. Steam for 8 to 12 minutes and serve with a soy-garlic dip. For the classic salt-and-pepper version, deep-fry 3 to 5 minutes until the shell turns bright orange-red, then toss in the wok with chilli, garlic and spring onion. Grilled over medium heat, allow 4 to 6 minutes a side.
Storage
Keep at -18°C or below. Do not refreeze once fully thawed. Use within 2 to 3 days of defrosting and within 8 to 9 months under proper frozen storage.
