How To Cook

For clam tofu soup, simmer the clams with soft tofu in a light broth and finish with spring onion and coriander. For a spicy stir-fry, hit garlic, chilli and aromatics with high heat in a wok, add the clams and toss until the shells open. In hot pot, drop them into the simmering broth and pull them out as soon as they pop. Discard any shell that stays shut, and avoid overcooking, which turns the meat tough.

Storage

Keep at -18°C or below. Thaw in the refrigerator before cooking, never refreeze after fully thawing and seal the pack tightly after opening.
