How To Cook
Deep-frying is the favourite: pat the thawed fish completely dry, dust lightly with starch and fry in hot oil until golden and crisp while the inside stays tender. Pan-fried with salt and pepper it needs almost nothing else, braised with ginger, garlic and soy it turns rich and savoury, and it makes a lovely light seafood soup.
Storage
Keep at -18°C or below. Do not refreeze once thawed, cook promptly after defrosting and reseal the pack after opening.
